I think that vim is much better than emacs for simple sys-admin text
editing, and kate trounces both of them for programming.

You can go to http://www.gentoo.org/doc/en/vi-guide.xml for a good
guide and cheat-sheet. You also can try the command vimtutor on any
machine that has vim installed. Personally, I found the pace to be all
wrong and have yet to complete the whole thing.

a week long Linux sys admin class, and I'd like to be well prepared.  I've
spent quite a few hours as a student using DOS EDIT, but I dont know if
that appropriate or similar to pico, vi or any other editor used on Linux.
