Take a look at this stuff: http://www.plasteak.com/
I built a swim platform out of their lumber, and 3 years later I am still very happy with it. I have no idea about their decking materials. I did the flooring of my single cabin 31' express with real #2 red oak left over from other jobs. It looks good, but real wood swells with water and so if you get a leak your flooring could tent up on you. Laminates will just disintegrate since they are simply compressed sawdust. I wouldn't use real wood again, but since it's in there already, I will live with it. Putting a better swim platform on my boat was one of the biggest improvements I have made. The original one was only about 18" deep and high above the waterline, so getting out of the water was really hard (impossible with any scuba gear). I lowered the new one so it's only a few inches above the water line, and it is about 32" deep. The plastic lumber was not terribly expensive (I can't remember exactly, but like $500 I think), the killer was having stainless steel brackets fabricated-over $750.
