I researched 3 years ago and ended with a tongue and groove engineered
laminated flooring. Here is the site:

 The finish has seemed completely impervious and is holding up very
well. Also the top wood laminate was thick enough to be sanded and
refinished if needed. I also resurfaced my table with  the flooring.
There is a picture called "new dinette table" under the file section
of this site showing both the floor and the table. It turned out
perfect.

It's not cheap but I liked the idea of the manufactured finish which
was a multi step process which I could not duplicate if I installed
rough flooring of any type. I expect it to hold up longer as a result.

Also get ready for a very tedious installation. The boat interior
doesn't have too many straight, long sections.

Also if you decide to do this I have a special 45 degree pneumatic
stapler I'll sell you cheap.
