Nah, I'm also using an AMD processor with Cool'n Quiet, and have no problems so far. I seem to recall that when I installed Cool'n Quiet the first time I ran accross a web-page (possibly the official Cool'n Quiet page) where someone said that they'd been running with Cool'n Quiet for sometin' like a year after which random failures started to appear. Wasn't slimserver specific/related though. But you might have a look there. You say "shutdown". Does it do so cleanly or is it a crash. Perhaps you could try starting slimserver with the debuging options enabled.
