Any computer which is 2-3 years old will be able to run slimserver under linux with loads of power to spare. I think you'd get better performance under linux; sometimes I read about people's scan times etc under Windows and I'm shocked. Having said that, the NAS would probably be the bottleneck in your setup.
Another thing to consider would be a VIA Epia mini-itx motherboard. These are small and energy-efficient. I have a fanless one, along with a small case that came with a fanless power supply, and it makes a great, small, energy efficient, and surprisingly capable server, including running slimserver. If mine dies, I'll most definitely buy another one - it's just a really nice piece of hardware, with good linux support, good documentation etc. If your linux box is not doing anything else (other than run slimserver) then 256mb of RAM should be enough, though I think 512mb would be better, especially if you're going to be installing a GUI, which is likely. I think it would be much better if the slimserver could connect to at least the NAS via a wired connection. Otherwise it has to retrieve the files wirelessly, and then send them wirelessly to the squeezebox. That's a lot of potential for insufficient bandwidth. In terms of setting it up, if you have any trouble just come here!
