When I first started with linux, I found that by installing the regular
desktop and poking around the command line, I got used to the whole
feel.  I had a few headless servers for a while and ditched them once I
got a fast machine.  

I now have a desktop installation (cause mythtv demanded a X windows
environment for config), and just boot to the command line login
screen, which doesn't boot X, so you save that resource.  That way you
can always use startx to get to your desktop to solve any problems you
can't figure out at the command line.  Good luck.
