If your primary use of the laptop is as a squeezecentre server, then I
would recommend using ubuntu 8.04 or 8.10 server versions.

I have 8.10 server running on an old p2 266Mhz processor with 192M
memory.  This serves up the music fine but is a little slow scanning
the library.  I have mplayer and lame installed for additonal music
formats.

I use PuTTY and WinSCP to work with the server which is completely
headless.

I also install midnight commander (mc) to manipulate files and htop to
monitor performance over SSH.

With the server version I only install SSH and samba. You can use
Webmin also for server management. 

All my music is resident on a second drive on the PC.

I previously ran Clarke Connect on this PC but I am convinced that the
Ubuntu server is better and more straightforward to set up.
