Have you witnessed that the mysql process runs when properly called
with sudo -u ? Or does it abort ?

If it aborts, you can run "dpkg --get-selections | grep mysql" for the
list of mysql-related packages that are installed on the system. Then
remove mysql completely with "sudo aptitude purge <package1> <package2>
...". I guess this will remove squeezeboxserver also, since it depends
on mysql.
When mysql is totally gone et squeezebox server as well, make sure the
/var/lib/squeezeboxserver  directory does not exist anymore, erase it
if you find it.
And reinstall once again squeezeboxserver.

If it runs... then the problem is not with mysql and you should post
the contents of the squeezebox server log, as mentioned above.
