I ran a very quick test last night - Installed SBS 7.5.4 on an Ubuntu 10.10 box; partitioned 1 SATA attached disk to have 1 EXT partition and 1 NTFS partition both mounted with default options; copied the same music library to both partitions and scanned each separately, deleting the SBS cache files between scans.
