As Co1 surmised, /var/log is mounted on a temporary filesystem (tmpfs), so when you rebooted anything in it disappeared, including the /var/log/squeezeboxserver directory. Co1's advice to start the service without rebooting also makes sense in this context.
Someday you will need to reboot, so you do need to sort out that problem eventually. You could amend your startup script to create the necessary directory, or you could use SBS command-line options to put the logs in a different place.
