That's a MySQL issue, though I can't tell if it's a problem with the MySQL installation, or just the password. Normally you only need to specify a password in server.prefs if you want to use an existing instance of MySQL, as opposed to the one bundled with SBS.
Here's a different thought: try 7.6 instead of 7.5.x. SBS 7.6 uses SQLite as the database engine, and it generally has a lighter footprint on system resources.
