Two thoughts: (1) try starting SBS from the command line instead of the startup script, and post any screen output here, and/or (2) change the startup script to write the logs to a different location. You do this via a command-line option. I don't have access to my server right now to give you the exact syntax, but it may already be listed in the startup script.
