Some answers, not all.
Have a look at the 'full release notes'
(http://wiki.slimdevices.com/index.php/Release_Notes) on the wiki to
choose your server version.
My recap of the past years would be:
* 7.3.4 a very stable version that works well with the older players.
Uses mysql. Has the plugin installer feature, replacing (sometimes
conflicting with) the old manual way of installing plugins.
* 7.5.5 ? a nice one if you have new generation players as Touch or
Radio. Uses mysql
* 7.6.2 replaces mysql with the lightweight SQLite. New, lightning
fast scanner. New browse/search implementation. Maybe it won't like your
tags or music files. But if it does, it flies.
* 7.7.2 is the current version. 7.7 added support for Revue
But you
can deactivate the upnp server and use it as plain SB music server.
Should resemble 7.6 with fixes.
* 7.8 is the development version.
Then go and 'download' (http://downloads.slimdevices.com/) the .deb
file(s) corresponding to the release(s) you want for archival purposes.
On an ubuntu/kubuntu server I guess you can use the software application
to add SBS 7.7.2. The old fashioned way, this is what I have in my
sources.list file:

- "apt-get install squeezeboxserver" seems to pull version 7.6.2 (this
is what I have installed, perhaps it pulls 7.6.1, since 7.6.2 was never
officially released. perhaps I got 7.6.2 via manual download + "dpkg -i
<package>.deb afterwards.)
- "apt-get install logitechmediaserver" pulls 7.7.2.
