Leave all the LMS defaults as they are installed. Unless you have a specific problem - the default is aimed at best quality. Changing LMS to transcode AAC to MP3 will result in setting playback to "worst quality". By default, LMS will try to trancode AAC to Flac which means audio quality is only lost during the initial compression into AAC, by using Flac to send audio to the player there are no further losses in quality during playback. If the AAC is transcoded into MP3 then you are introducing another bout of lossy compression when sending the audio as MP3 to the player.
