On a real Player the Volume is defined in the server.prefs from your
lms.
(take a look on your settings / information tab to get the path of your
server.prefs)
Is there a change between a raspberry restart?

On a Softwareplayer like the raspberry there is also the raspberry
(alsa) setting.
May thats the point, why your player changes the volume.

Under Raspbian (which is not Picoreplayer) that is saved in
/var/lib/alsa/asound.state
On my Pi powered Players i use that command

    amixer -c 1 set Speaker playback 90% unmute
  
--------------------
 to set the volume to 90% when my squeeliteservice is started.

So yes there must be a way even under picoreplayer, you had to check
which setting changes (imho it must be the alsa setting)
