I haven't watched your video, but the two Analogue controls are more switches than controls. The main Analogue is a 0db/-6db switch. Set to 0db for 2V full-scale output. The other control is an additional 0.8db boost. You should set both of the analogue controls to max, and "-V Digital" from piCore Player config to be telling squeezelite to use the on-chip digital volume control to actually adjust volume. The 0db and 0.8db on the analogue controls will give you 2.1V 0dbfs IIRC. You control volume ie. attenuate it, with the Digital control.
