I just want to point out that I got exactly such a system running without problems. The only thing is that at first you need to connect it to your router or switch via Ethernet because that gives you the possibility to configure everything. Once you have done that, you can turn on the AP mode, and it was working right away for me. The only thing I "discovered" was that this kind of setup is difficult for maintenance. Maintenance mostly means you would want to update something, and that is much easier being connected to the internet.
