I would second the recommendation about the Sonnet Tempo ATA card. I got one (without hd attached) years ago and they are great! Much faster than the old SCSI and very stable.
I have been putting on larger and larger hard drives: Now I have one of 30 gig and one of 100 Gig. The 30 gig has a 7 gig partition so I can run OSX. It also took a bit to get loaded but once on OSX works very well. I'm quite impressed with the stability. I kept one of the old SCSI drives installed with an old system as a backup and to be able to upgrade the Sonnet ATA card with new drivers/firmware as needed.
On the other two ATA ports have an old Apple DVD drive (from a G4 APG) and a super-cheap Philips CD/WR. The Philips I got at Wal-Mart for $45. I only get reliable burns at 12x and not at the maximum 24x the drive is capable of (Using Toast 5)
In order to get it to work with iTunes I had to use PatchBurn 1.1 I used one of the Philips CD/RW drivers. In iTunes, I can specify the burn speed so I can lower it to 12x but the OSX Finder only will burn at the maximum speed so I don't get reliable burns with it. But I really don't need to burn from the Finder so it is not a big deal for me. It works with iTunes and my car CD player and that is all I need.
The system sees the drives connect to the ATA card as SCSI drives so I have yet to get the Apple DVD Player to recognize the Apple DVD drive. Maybe someday.
Get the Sonnet (or similar) ATA card for hard drives but keep one of the original SCSI as a backup.

I would strongly recommend against getting 80 to 50 pin adapted internal SCSI drives. I got a couple of those and I had a great deal of trouble with them. Driver problems, settings problems, etc.
I've also had a couple of external FW hard drives. I found those worked fine in OS X, but I had trouble with them freezing up in OS 9.1 despite experimenting with both Powerlogix and Ratoc FW cards.
In the end I got a Sonnet Tempo ATA card with a hard drive mounted on the card. I wish I had gotten it in the first place. I had some difficulty getting OS X installed on it, but since then it's been great. The card was not cheap, but compared to the time I spent on the SCSI drives, it was a deal.
