just have tested, this seems to be not working :(
you can edit `webapps/openmeetings/WEB-INF/classes/logback-config.xml`
and change

        <root level="INFO">
                <appender-ref ref="FILE" />
                <appender-ref ref="CONSOLE" />
        </root>

to be

        <root level="INFO">
                <appender-ref ref="FILE" />
        </root>

this way all OM logs will go to openmeetings.log, catalina.out will be very
small
