Note that "tables" are not obsolete: they're still
quite useful for rendering columnar information, which
is what they are designed for, even in the age of CSS.

Then either (a) use the "simple" theme like you
already said you're doing, (b) customize an existing
theme, or (c) create your own theme.

Perhaps, but it's also documented in the tutorial that
this is the behavior.
