Hi :) There should be 2 main folders for the Program, one in "Program Files" and your User Profile with all your settings and stuff stored neatly somewhere in "Documents and Settings".
LibreOffice can use OpenOffice's settings so that you have things set-up the way you liked. Using the equivalen of "Add/Remove Programs" or "Software Centre" or whatever Win7 calls it should show the program part of OpenOffice and should let you uninstall that.
