Kannel is good for your need :)
However, you still need understand this machine because this software is not
like GUI application that simply install -> next -> next -> finished :)

Good luck

We need to send and receive SMS messages (no WAP pushes) to the US market

Most of time, we'll do a few hundred.

We need delivery to be fast but not immediate. Our customers are willing
to wait a few minutes for receipt, but not more than about 10 minutes. We
expect to send messages to about 500 handsets at a time.

We don't need any PSMS features.

Kannel seems really interesting, and much more economical than going
through mBlox or some other aggregator.

Do I just need to go out and buy a GSM modem, then rip a sim card out of a
phone that I got through a carrier and I'm ready to go?

A really basic walkthrough would be very appreciated.
