Don't try to uninstall X11. You may want to use it for another Unix program later. All you actually have to do is download OO 3 for the PowerPc, install it and use it. If you really want to remove the old version, just drag it from your Applications folder to the trash and delete it.
If you are so new to OS X, I strongly recommend you buy or borrow from the library an elementary book, like an OS X for Dummies book to get you started, especially if you are coming from a Windows environment. The differences are significant. By the way, I had X11 versions of OpenOffice on my Mac OS 10.4 PPC powerbook before version 3 came out, and I used it successfully under X11. To avoid slow startup, just keep X11 open all the time. It takes up few resources when it is not in use, and it is open already when you start up OpenOffice.
