I think in word processors it is called "reveal codes". I faintly recall that WordPerfect was the *the* wordprocessor to use codes. One could, IIRC, write the whole document using codes, something like a LaTeX document today. A bit off the track: sometimes I think WP may have made a better word processor than OOo had it been released under an open source licence. I am not sure you can do it exactly this way.
