I would not install the non-portable version of OOo on
a thumb drive (USB stick).

The installation process for the "normal" (non-portable) version is a
3-step process:
1. Download the relevant file from from www.openoffice.org to a place
of your choosing. Sounds like you plan to download to a USB drive.
2. Run the downloaded file. This step will create a directory (you
choose where) containing many files, one of which is the actual
installer.
3. Run the installer. This normally happens automagically upon
completion of #2. This step creates a directory (you choose where)
which will contain several files and sub-directories. It is this
directory and its sub-tree that actually constitutes the OOo
installation. It is possible but probably unwise to put this
directory tree on your USB drive. The reason is that this step
will update the Windows registry and will therefore tie the
registry to the USB drive which will then not be usable for OOo on
another computer. Hence the existence of the *portable* version.
Once these three steps are complete you can safely delete the file from
#1 and the directory and its sub-tree from #2. You must keep everything
that got created in #3.
If you plan to install the *portable* version on your USB stick then
please read carefully the installation instructions on the
www.portableapps.com web site. These instructions are *markedly
different* from those outlined above. Installing this version does not
affect the Windows registry and so the USB drive is usable on any
Windows computer.
