It sounds as if you're referring to the "file associations" that tell the operating system what program to use. You can generally right-click on a file and browse to the program you want to have open it, and if you select the "always use this program" option you just need to do this once for each type of file. For any of the types that OpenOffice.org can read, you can find the specific program (swriter.exe for word processing types like .doc or .odt, for example) or just soffice.exe for any of them.
