OpenOffice normally does that, unless you tell it otherwise during
install.  However, it's easy to change the file associations, so that
you can use your choice of application to open a file.  Here's the
directions:

Changing file associations

Right click on file icon
Select Open With > Choose Program...
Check "Always use the selected program to open this kind of file" and
choose the desired application.
