This won't suit your way of working, but perhaps it's worth mentioning (for others' benefit?) that the typing that stimulates an automatic "correction" and the subsequent correction are handled by OpenOffice as two operations. So immediately going to Edit | Undo (or pressing Ctrl+Z) should undo the correction and leave what you really typed.
