That's a good question. There is some info documented here:

Specifically the last section on that Wiki page is about setting up the email client on Windows.

OOo uses the default client in Windows... whatever that is set to. Have you followed those basic steps? (including the ones in the linked Mozillazine article?)

If there's an error in the Wiki info, or it could be improved, let me know.

There is no information on Macs on the Wiki. It is basically the same as Linux except the path to the Preferences file.

This feature won't work with Thunderbird on a Mac due to a bug in Thunderbird.

In fact, it is possible to use Thunderbird on Mac with OpenOffice.org, but it's not possible to "Send as .." the open document when a Thunderbird session is already open. I tested with Thunderbird trunk, learned Mozilla/Thunderbird source code, and asked to the Mozilla devs, but for the moment this is not possible.

Now, if you are interested, I did some improvement (but I did not completely fixed the issue though), of the current script in OOo4Kids, and use Thunderbird is possible with it (a patch is available at : http://eric.bachard.free.fr/OOo4Kids/patches/March_2010/2nd_march/ senddoc.sh.diff

The change is under LGPL V3 (fully compatible with OpenOffice.org), and can of course be easely backported into OpenOffice.org, if ever somebody find it interesting and wants to take over (not sure).

For further information, see : http://wiki.ooo4kids.org/index.php/ Changelogs ( changes from 17th August 2009 )
