I was taught many moons ago when I was in school: I, A, 1, a, i.
However, I can't do the style I want with this automatic stuff happening.

First, you might actually want to set up the numbering style you really
want using Format > Bullets and Numbering > Options, which gives you
full control over what is done, and would let the automatic numbering
manage your list. Once you have that, it would be applied any time you
created a numbered list.
If you really want to stop the numbering altogether, try Tools >
Autocorrect Options, Apply numbering - symbol and deselect it. I think
that'll do it.
