Ergo, you don't have the problem. Printing letters or other things on blank paper (letter size) does not pose any problem because there is no top, bottom, right side or wrong side.
For effective troubleshooting the process needs to be pared down to exactly at what point the problem appears. Since you did a lot of upgrading at once this is difficult. The problem may be in OOo, or it may be in something else that is involved in the print process, e.g., CUPS, the PPD file that CUPS is using, and probably any of several other components.
No, the problem is OO.o; nothing else is used to print envelopes. But, you are correct that checks are printed from the accounting software, not OO.o
Another issue is which OOo 3.1.1 you are using. If you installed it from the repository for your distro it is probably the GO version, not the "official" OOo version. Most distros tweak things and occasionally they screw up in the process. I doubt it matters in your case, because the GO versions usually just delete features, but it is still a consideration.
