I have Mac OS 10.4.11.
When I first tried to open OpenOffice, an error message came up that
X11 was required. After I installed X11, that message no longer
appeared.
Whenever I try to open OpenOffice, it finds X11 and opens it; the
icons for both programs appear in the dock, and then the OpenOffice
icon vanishes.

What we need to know, is which version of Mac OS X do you have? I'm
sure, there is somewhere an "about" information, that tells you that
you run Mac OS X 10.6.4 or something similar.
Second, which version of OOo did you download? If you don't know this,
can you give us the website, where you've downloaded the software?
Third, as far as I know, if you have both a recent version of OOo and
of OS X, then you don't need to install X11, since OOo can run
natively on OS X.
