I haven't tried it with 2.0.1 yet, but I also got an error that Open
Office doesn't support saving using the SMB protocol. I haven't tried it
yet, but I wonder if mounting the samba folder as a local folder
wouldn't fix it.

Having just installed Samba on an all linux environment, I can emphasize
with you. After a couple of days of trying one thing and then another, I have
been able to use OOo (OpenOffice.org) with Samba. This morning I used OOo to
get a document from the Samba server, modify it, and then save it on the
server. So I doubt that OOo is the problem.
The problem is most likely in how you have Samba set up, and whether you
have a firewall on any of the computers or not.
Since this is most likely a Samba problem, you might want to check with
them. However, I may be able to help you if the problem is simple. Please
