Two things:

1. You seem to have set OpenOffice to save as .doc format by default.
That's fine, especially if you want to email files to other people who
do not have OO.

2. Your computer is set to open all .doc files in wordpad. The files
can be opened in OO by starting OO then going to File- Open and
clicking the file you want.

If you want to set Windows to use OO to open doc files, you can do this
by right clicking on the icon of a doc file and there will be an option
there to choose Open Office and you will be asked "Do you always want
to open files of this type with his application?" Choose "Yes"
