Open the document, then do Control-A to select everything. Then right click on the page and choose "Character". In the "Font" tab there is a box that displays the language of characters you have selected. Change this to English (Australia) and it should show the required format. If this doesn't work, go to where the date field is shown and delete it. Now go to Insert- Fields- Other (or just press Ctl+F2). Click on the Document tab and select Date. There you will find a whole heap of dates, which should be in the Australian format, but if you want to choose a format that's not there, or even invent your own, you can choose "other format".
