If I download Open Office and it converts all my documents and I decide to change back, will I lose my documents or will I have any problems with the change?

Presumably, when you say "convert", you mean from MS Office;  if so then ...
OO has a Save As feature which allows you to save a document as a .doc (MS Word format). If you convert all your .doc files to .odt then, if you decide to switch back you must convert them back before removing the OO installation.

MS office cannot open OO documents. I think MS has plans but I wouldn't hold my breath.

You may lose some formatting/features/fonts but ...

But then, why would you ever want to switch back?
