I would say that the answer is no. There is no choice to update
the styles of a spreadsheet with a template. So, it looks like you
have to change the styles of your spreadsheet to match that of your
template.
It also seems that the only way to have Files > Properties >
General show the name of the template used by the speadsheet is to
create the template first and then File > New > Templates and
Documents. Select the template you want to use and click OK.
