I recently downloaded and installed OOo 2.1.0 [i.e. the latest released version] and installed the redhat configuration so that I could use it from my 'office' menu. Hopefully, thanks

I can't offer any explanation why your menu entries have disappeared,
but look for shell scripts in the OOo "program" directory
/opt/openoffice.org2.0 for the "official" edition, some distro editions
install in /usr/lib64/ooo-2.0/program or /usr/lib/ooo-2.0/program
You could just do a search for the "soffice" shell script.

You shouldn't need to know the full path to the scripts, because if you
add the Kmenu entries manually you only need to enter the script name in
the command field (eg. "swriter %U" for Writer, "scalc %U", etc).

Unless there has been a major departure, the programme will be in /opt

For your menu shortcuts, you need to use the full path unless you are using commands or links in /usr/bin or some such folder recognised as path, which /opt normally is not. There is, apparently, an error in links:
