Create a new document. Save it as usual (no version) . Now
modify it. The Versions option is no longer greyed out
and the modified document can be saved as a new version of
the original.

I find the behavior a little strange. Perhaps it is the
windows version. I am using 2.1 on Linux. I opened a *.odt
file that I created over a year ago. When I opened the File
menu, Versions was NOT grayed out. I then made some changes to
the document and saved those changes using File > Versions and
clicking the Save new version button.

Ah, I guess it only works with ODT files!! Drat.
