I believe that this is due to the "ubuntu-desktop" meta package. In
synaptics do a search for ubuntu-desktop, right click on it and look at
the properties to see all of the dependencies. In order to completely
uninstall OOo you'll need to uninstall this package first (sudo apt-get
remove ubuntu-desktop).

Be aware that it will uninstall Thunderbird if you have that installed -
don't know why, but make backups of your mozilla & evolution directories
before you uninstall. 2.1 will then install properly, including the
Gnome application menu & icons. Note: you can always reinstall the
ubuntu-desktop later if you want to.

After removal, I then reinstall whatever I want back. All of my systems
have ubuntu-desktop removed & all work just fine without it.
