See Outils > Options > Paramètres linguistiques > Langues
If French is not among the languages you can select, you will have to
download the corresponding dictionary at
<http://wiki.services.openoffice.org/wiki/Dictionaries>. You can
download e.g. fr_FR-1990.zip.
