the problem was in
Tools | Options... | OpenOffice.org | Accessibility.  Under "Options for
high-contrast appearance", make sure that "Use automatic font color

Did you try printing, or saving to a .pdf file? The colors may actually
be there. This may just be a problem with the Accessibility options
using automatic color for all text display, which you don't want. In
en-US locale: Tools | Options | OpenOffice.org | Accessibility | Options
for high contrast appearance | Use automatic font color for screen display.
