First create a new, empty spreadsheet. Now go to Format>Page and select
Landscape. Now go to File>Templates>Edit and choose a name for your
Landscape blank "template". I called mine LandscapeSpreadsheet. Click OK.

Now, when you want to use this template, do File>New>Templates and
Documents   and choose the template you just created. You can set it as the
default by selecting it from within File>Templates>Organise and clicking Set
As Default.
