This is not the fault of the email programs as the standards that

I don't believe that the mailing list guidelines are meant to
condone or encourage thread hijacking.
Since many of the people posting questions to this list appear to be
quite inexperienced with all aspects of computer use, I think that
we're lucky when the subject line is changed, and in some cases lucky
that there is a subject line at all.
For those who are concerned about "hijacking", I suggest, as I have
suggested before, that they volunteer to update the guidelines.
In the meantime, I suggest that more sophisticated email readers be
set to follow threads by subject line when reading this list. If
they do not have that capability, it seems they might be different,
but not necessarily more sophisticated.
No, the right approach is the one that is taken on this list- politely
point out to people that what they have done is incorrect,
In your view it is incorrect. I don't think it matters here.
and
ultimately detrimental to themselves as
1. they may miss out on having their question answered.
2. they may venture onto another list that is not as kind to newbies as
this one and find themselves being flamed mercilessly for behaviour
which they have come to experience as being correct.
People on other lists may be jerks, as you claim. I don't think newbies
should have to worry about that here.
Your approach is like saying I drive on the left hand side of the road
in Australia so therefore American drivers should change their
behaviour when I go there.
If I find you driving on the left hand side of the road here, I will
most certainly drive on the left to avoid a collision and wave as we
pass. In fact, where I live, that isn't all that uncommon. So I guess
as far as driving goes, you're right, and I am indeed willing to be that
accommodating.
Let me say again, if it's so important to you, and if you genuinely
think it's important to new users, volunteer to update the list guidelines.
Otherwise, I think you and I can probably find a way to follow the
thread however the subjects are handled.
