I'm not sure that there is a real problem here.
You are quite right that your equation may display in Writer in a box
which appears too small to accept it. (At least, it may on my 2.3.1
on Windows XP.) But the precise appearance depends on the
magnification of the display. If I go to View | Zoom... and change
the Zoom factor, the behaviour varies. The smaller the zoom factor,
the greater the problem is - but the larger the zoom factor, the more
reliably the complete equation is shown. Again, in Page Preview the
actual appearance seems to vary according to the Preview Zoom
setting, with larger magnifications showing the result more reliably.
But when I print your document, I see the full equation, complete
with the full square brackets. So your problem appears to be
cosmetic rather then real. It would be better, of course, if you
could always see the equation as it will be printed, but the final
result - either printed or exported as PDF - seems to be
correct. Unless you know different, of course ...
