The answer is a tentative "yes," in that it can be done, but the disc
space recovered would be minimal, and you can lose some functionality.
OpenOffice.org is built around a common "core" which is shared by all
the components, so the spreadsheet module (I think) supplies table
functionality in Writer, etc.
Generally speaking less than full installations are discouraged.
