Generally, fax programs create a "printer" that you'd print to, like any
other printer. So, you just print the document, select the fax printer
and follow whatever comes next. Also, a popular alternative to sending
fax is to create a PDF file with OpenOffice and then email the PDF.
There is also this OpenOffice.org Extension that connects you to eFax.

Note though that eFax is a pay service... you get a free trial... and
then you have to pay a monthly subscription for the service if you keep
using it.
