By default, OpenOffice saves in the ISO standard ODF file formats, which Microsoft refuses to support. You'll have to send in Microsoft Word format. You can easily do that, by clicking on File > Send > E-mail as Microsoft Word. A better methoed would be to get the recipient to install OpenOffice (it is possible to have both OpenOffice and Microsoft Office on the same computer) or perhaps the Sun ODF plugin, which will add ODF support to Microsoft Office.
