As a workaround, I can insert new footnotes, copy/paste the footnote text from the old to new footnotes, then delete the old footnotes, but that's rather roundabout. Is there a more direct way?

Tools>Footnotes>Footnotes and choose the settings you like including things like numbering them i, ii, iii, iv, ...
