I can't find a way to change text to, say, red background or blue font or bold & italic. That would be nice ...

Once you have made any such changes, go back and find them all again using Find & Replace (with a different search, of course) and Find All; this selects all the text you want to affect. You can now easily change font, font effects, highlighting, and so on. It takes only one operation to change any number of occurrences as long as you use Find All.

The only oddity appears to be background colour, where you must use Format | Character... | Background instead of the Background Color button in the Formatting toolbar, since that changes the paragraph rather than character property - so it affects the whole paragraph(s) rather than just the selection.
